Splash-worthy Snacks

Whether it was the second thought to donning your jacket this morning, or the flip-flops you keep eyeing at the bottom of your closet, it’s pretty clear that warm weather is just around the corner. That means the beach rentals are filling up fast, the parks will be packed again soon and, of course, the pool will reopen before you know it. Slews of swimmers will claim their chairs in hopes of a long, warm season. So, slather on the sunscreen, grab those towels and don’t forget to pack a cooler with snacks that look just as good lounging poolside as you do.

Caprese Salad Sticks
Makes 8 servings

4 grape or cherry tomatoes, halved
1 purple onion, quartered
8 ounces fresh mozzarella, sliced and quartered (you can also use mozzarella balls, halved)
8 fresh basil leaves
¼ cup olive oil
Salt and pepper to taste
8 sticks

In a small mixing bowl, toss together the tomatoes and onion with olive oil, salt and pepper. Let sit for one hour, or overnight. Then, on each stick, stack one tomato, one onion sliver, one piece of mozzarella and one basil leaf.

Summer Citrus Spritzers for Kids
Makes 1 serving

1 cup ginger ale
½ cup pineapple juice
1 lemon, sliced
1 lime, sliced
1 orange, sliced

In a large pitcher (or drink dispenser), combine sliced fruit, pineapple juice and ginger ale. Add ice to serving glass and pour over ice.

Pimento Cheese
Serves 8

pimento cheese

2 cups shredded sharp cheddar cheese
1 jar pimentos, diced
½ small onion, diced
1 Tbsp. white vinegar
½ cup light mayonnaise
1 Tbsp. black pepper
1 Tbsp. salt
1 dash Cayenne pepper (or Tabasco)

In a medium-sized mixing bowl, combine all ingredients until mixed well. It’s best if it sits overnight. Serve with celery or sturdy crackers.

The Fresh Market’s Carrot, Radish and Cabbage Salad with Creamy Coconut Dressing
Makes 6 to 8 servings

Fresh Market SALAD 3 scallions, thinly sliced
½ bunch radishes, tops removed and thinly sliced
2 carrots, julienned
2 cups Napa cabbage, shredded
¼ cup cilantro, chopped
¼ cup cashews, chopped (optional)

½ cup So Delicious Culinary Coconut Milk
1 ½ tablespoon honey
1 lime, juice and zest
1 tablespoon soy sauce
½ teaspoon pepper
½ teaspoon salt

Combine salad ingredients in a large mixing bowl. In a separate bowl, whisk together all ingredients for creamy coconut dressing. Pour dressing over salad and toss until the vegetables are fully coated. thefreshmarket.com
