Blue Moon Bruschetta

Blue Moon Bruschetta

1 1/2 cup plum tomatoes, or about 4 tomatoes
1/4 cup red onions
1/4 cup feta cheese
2 tablespoons extra virgin olive oil
1 1/2 tablespoons balsamic vinegar
6 – 8 fresh basil leaves, chopped rough
Kosher salt and fresh ground pepper to taste, or just a pinch of each
8 1/2 inch-slices of French baguette bread 
Italian seasoning for bread

Brush oil over sliced bread and sprinkle your favorite Italian seasoning on top. Toast for about 5 minutes. Bread should be lightly browned but not too crispy. In a medium-size bowl, mix tomatoes, red onions, feta, basil, oil, balsamic, and salt and pepper. Do not over-mix, or the feta will begin to break down. Place in a serving bowl, with bread. You can either make the bread and bruschetta mix self-serve, or place the mix on top of the bread for your guests. Enjoy!
